Keto Buttery Maple Syrup: Not Just for Breakfast

By far, my most favorite maple extract. While Boyajian Maple Extract it is a bit more expensive than the average maple extract, you are paying for quality that makes a difference

- 4 tbsp butter
- 1/4 tsp vanilla bean powder The vanilla bean powder can be substituted with 1 tsp vanilla extract.
- 1 tsp maple extract
- 3/4 cup water
- 1/4 cup swerve confectioners sugar
- 1/4 tsp xanthum gum
Ingredients
Servings: 1 tbsp

- Gather your ingredients and a medium sized skillet to cook your syrup in.
- Place 4 tbsp butter in skillet and heat on low until butter is melted.
- Add 1/4 tsp vanilla bean powder (or 1 tsp) vanilla extract and 1 tsp maple extract to butter and cook for two minutes until butter is slightly browned.
- Add 3/4 cup water. Stir until butter and water are incorporated.
- Add 1/4 cup swerve confectioners sugar. Whisk until mixture is smooth and the lumps are gone.
- Sprinkle 1/4 tsp Xanthum gum over mixture and stir until maple syrup is thickened. If the syrup is too thick add a little water until proper consistency.
If you want your maple syrup to be a little darker, experiment with adding 1 tsp or 2 of powdered espresso. The flavor only changes slightly, but adds a darker richer color to your maple syrup.
The syrup will last refrigerated up to 4 weeks.

Is honey ok in a keto diet?
No, I’m afraid honey is not okay on keto. While there are a lot of overall health benefits in raw honey, it is too high in carbs for a keto diet. The natural sugar wreaks havoc with blood glucose levels.

Does this syrup stay liquid at room temp or must it be warmed up prior to use?
It does stay liquid at room temp. I store mine in the refrigerator. I do warm it up before serving sometimes, but just a good stir will do the trick as well.
I just made this in preparation for my first keto pancakes in the morning and I just wanted to leave a review since the other reviewers don’t seem to have made it yet when they responded. It is delicious! I am very excited for my pancakes in the morning, but I also plan to try it in my coffee. I used the maple extract I had on hand which is probably not as good as yours and seems to have a more caramel flavor. I did add a little salt to mine because I admit I prefer the taste of fake pancake syrup over real maple syrup and I feel it usually has a little salty taste. It was super easy to whip up at 9:30 pm! Mine tastes a little like salted caramel which is a good thing in my opinion. Thanks for the recipe!

Mine doesn’t seem to be thickening it stayed the same consistency as water. How sticky/ thick should I expect it to become? Did I not cook it long enough?
My guess is that you need to add a little more Xanthum gum. It is okay to pour it back into the pan and heat it up again. Add a small amount of xanthum though, because it gets almost a snotty consistency (excuse the grossness) if you add too much. This should do the trick to thicken it up.

Can you use vanilla extract?
You can use vanilla extract instead of the vanilla powder, though I prefer powder because it adds a bit more flavor to the Maple syrup. This is because it’s a little more concentrated. Be aware that sometime there is hidden sugar in vanilla extract, so be sure to read the label.

Can I use arrowroot powder instead of xanthan gum?
I haven’t had much experience with arrowroot powder to say for sure. I’m not certain if it would leave a bit of an aftertaste. Also, it does have almost 7 carbs in 1 tbsp.
Where do you buy your vanilla powder from?
I usually get mine online at amazon. There are quite a few choices and they ship it to my door. A win-win.
I have not made this recipe yet, but I intend to. I have made some similar to it and it looks and taste good but I would like for it to be more of a brown color. How do I get it to look like real maple syrup? Should I brown the butter some?
