Pumpkin Puree recipe made from Scratch

Pumpkin Puree can be a solid option on a keto diet if used wisely. Nutritionally, one cup of pumpkin weighs in at 12 grams carbs. It’s important to note that 3 of these grams are fiber. Therefore, the effective carb count is 9 grams per cup.

While this may seem like a large amount; consider how much puree actually goes into a recipe. Then divide it accordingly.

Nutritional Value of Pumpkin Puree

When used sensibly, you can enjoy the flavors of the fall season as well as pumpkins excellent nutritional value.

Pumpkin is rich in Beta-Carotene (an important anti-oxidant), vitamins A and K. In addition, it has a healthy dose of copper, vitamin C, magnesium, iron, and potassium.

With all that pumpkin has going for it, it’s easy to see why a keto’er can make pumpkin a part of their healthy diet.

Choosing the Right Pumpkin

Choosing the best pumpkin for roasting can make the puree process much easier.

I have found that sugar baby pumpkins have the best flavor and their flesh is drier than larger pumpkins. I prefer the drier flesh as it makes for a drier puree but any pumpkin will work.

A Simple but Effective Trick for Roasting your Pumpkin

A simple but effective trick is to roast the pumpkins cut side down. This allows the excess juice to drain from the pumpkin. As a result, the flesh is drier and the puree is not as watery.

Having the Right Tools Makes All the Difference

Having the right keto cooking tools makes life much easier when preparing recipes.

For the pumpkin puree, having a food mill makes the job quicker and therefore, less painful. I like stainless steel, as it doesn’t leach any thing into the food I’m preparing and it cleans up nicely.

Here is the one I use (affiliate link) OXO Good Grips Food Mill. I’ve had it for over 6 years now and it is practically indestructible.

Instructions
  1. Preheat oven to 350 degrees
  2. Cut pumpkin in half and clean out all the fibrous innards and pumpkin seeds. (set seeds aside for roasting)
  3. Rinse inside of pumpkin and set halves cut side down on baking sheet lined with parchment paper (for easier clean up).
  4. Roast pumpkins in oven for 25-35 minutes until pumpkin shell is easily pierced with a fork and pumpkin is soft.
  5. Allow pumpkin to cool until it is easy to handle. Be sure to keep the pumpkin cut side down while cooling. This lets the juice from the pumpkin drain and keeps the puree from getting to watery.
  6. After the pumpkin has cooled, gently scrape the flesh away from the pumpkin shell into a bowl.
  7. Put the pumpkin flesh through a food mill, food processor or mash by hand to the desired consistency.
  8. If your pumpkin is too watery (sometimes this happens with larger pumpkins), place a piece of cheese cloth in a strainer and place the strainer into the sink or over a dish to catch the water.
  9. Pour the pumpkin into the strainer and let it drain for an hour or two to remove excess water.
  10. Once drained, the pumpkin can go into the refrigerator for up to a week. In addition, pumpkin puree freezes well. Divide into desired portions and freeze up to 3 months.

Thick and Tangy Simple Keto BBQ Sauce

There are three things I believe a good bbq sauce needs.

First of all, it must have great flavor. Something that tingles the taste buds. I liken it to a really good wine where the flavor lingers awhile on my tongue after it’s gone.  And so, this is key to the best bbq sauce.

Secondly, the sauce HAS to be thick. I’m not a fan of thin watery bbq sauces. I know there are those who find this okay, but I’m not one of those people. I want my sauce to stay put on what I’m grilling. What good is a sauce that runs or puddles everywhere but where you want it?

Lastly, I want my sauce without a bunch of additives, preservatives and sugar. Just simple goodness in my keto bbq sauce please.

No ketchup needed for this tasty BBQ Sauce

The non keto brands are filled with corn syrup, cane sugar or fructose. Yuck! Even the so called better brands may have honey or try to make the carbs better by calling the carbs organic.

On top of this, the keto store brands that do work are just down right expensive. So you might as well by the keto bbq sauce outright if you have to buy ketchup. Because of this, I don’t use ketchup in my sauce and to my amazement, I find I like it better that way. The flavor of the bbq sauce is more concentrated.

Instructions
  1. Melt butter and olive oil In a medium sized saucepan over med heat.
  2. Add diced onion and saute until softened and fragrant (about 2 minutes)
  3. Add spices and stir for another minute to help develop the spices for exceptional flavor.
  4. Stir in sweetener, tomato paste, tomato sauce and apple cider vinegar. Cover and cook over low to medium heat until sauce is bubbly and fragrant. About 2 minutes.
  5. Use immediately, or pour into glass jar and store in the refrigerator for up to two weeks. Makes a little over 12 ounces or about 12 servings.
Recipe Notes

A few things of note.

  1. I know, pumpkin pie spice is a bit unusual, but trust me. This spice has the cloves, allspice, etc. you would get in ketchup and gives your sauce an extra layer of flavor.
  2. Use more red pepper flakes if you like your bbq sauce on the spicy side.
  3. Trader Joes South African Smoke Seasoning blend is optional, but as I said before... this stuff is amazing!
  4. As always with keto cooking, feel free to use your sweetener of choice, though the golden is my favorite for this recipe.

I must confess, when it comes to this Keto blueberry balsamic chicken dish all convention goes out the window. I can’t help it. It’s that good. The combination of sweet blueberries, maple syrup and balsamic is so full of flavor, it’s frightening.

So consequently, I lick my plate.

There, I said it. Yes, I’m ashamed of my lack of self control, but when it comes to this dish I can’t help it.  Don’t blame me, if you find yourself in the same predicament. I’ve done my best to warn you.

Add a little pizzazz to your diet with Keto Blueberry Balsamic Chicken

One of the things  I’ve wondered about since starting keto is why the meals we eat can’t have a little more pizazz.

I get tired of eating the same old things. Cheese, almond flour, and proteins all have their place in the keto order of things, but it does get boring.

The carb content may be a little higher with the blueberries and balsamic, but it’s worth it. To offset the little bit of higher carb content for this dish, I watch the other carbs i’m eating for the day. It’s as simple as that.

  • 12 oz chicken skinless, boneless (4, 4oz chicken breasts )
  • 2 tsp salt divided
  • 1 tsp pepper divided
  • 3 tbsp olive oil divided

  • 1/4 cup balsamic vinegar

Instructions
  1. Preheat oven to 350°F.
  2. Season chicken with 1 tsp salt and 1/2 tsp pepper. Set aside.
  3. Heat 2 tbsp olive oil and 2 tbsp butter in a large heavy skillet over medium heat until butter is melted and hot and bubbly.
  4. Add the seasoned chicken to the hot pan and sear for about 4 minutes on each side until chicken is lightly browned.
  5. Remove the chicken from the pan and place in oven proof baking dish. Set aside while making the blueberry balsamic glaze.
  6. With the same pan used for searing the chicken, add the remaining olive oil and butter. Heat over medium heat until butter has melted.
  7. Add the thinly sliced onions and turn heat to low. Cook onions until softened, fragrant and slightly caramelized. About 5 minutes.
  8. Stir in balsamic, maple syrup, rosemary, oregano and remaining salt and pepper. Simmer on low for another 5 minutes to concentrate sauce. Stir in blueberries and remove from heat.
  9. Pour the blueberry balsamic mixture over chicken and place baking dish in the oven for 20 minutes. When done, Chicken should no longer be pink in the middle and reach an internal temp of 165 degrees F.
  10. When serving, remove chicken from baking dish and serve with blueberry balsamic glaze spooned over the top of each chicken breast.

Goat Cheese and Asparagus Quiche is a healthy Powerhouse

As you know, eating healthy low carb veggies is important on a Keto diet. Fortunately the Goat Cheese and Asparagus Quiche is packed with them. The spinach and asparagus is a good source  of fiber and nutrients you need everyday. These delicious vegetables contain vitamin’s K, A, B2, B6, E, and C. You’ll also find  manganese, folate and copper in them too. A healthy powerhouse indeed.

  • 1 1/2 cup spinach leaves Fresh
  • 2 lg shallots thinly sliced
  • 10 asparagus spears washed and patted dry
  • 6 oz goat cheese crumbled, separated
  • 6 eggs
  • 2 tbsp olive oil separated
  • 1 tsp sea salt plus additional for seasoning asparagus
  • 1/2 tsp freshly ground black pepper plus additional for seasoning asparagus
  • 1 tsp hot sauce optional
  • 3/4 cup heavy cream
  • 3/4 cup whole milk
  • 1 tbsp fresh dill finely chopped

  1. Preheat oven to 375 degrees.
  2. Prepare asparagus by placing it on a baking sheet. Pour 1 tbsp of olive oil on top with a few sprinkles of sea salt and a grind or two of black pepper. Stir gently to incorporate oil on all sides of the asparagus. Set aside.
  3. In large iron skillet heat 1 tbsp olive oil over medium high heat.
  4. Add shallots to the pan and cook until they are softened and fragrant. Remove them from pan and set aside.
  5. Crack eggs into a medium sized bowl and whisk to blend.
  6. Add salt, pepper, hot sauce, cream and whole milk. Whisk all ingredients to combine.
  7. Before adding ingredients to your pan, make sure it is well oiled to prevent sticking.
  8. In layers, spread the spinach and then follow with the shallots. Sprinkle 5 oz of the goat cheese atop the shallots, reserving 1 oz of goat cheese to for later.
  9. Next, pour the egg mixture on top of the layered vegetables and goat cheese and poke down spinach into egg mixture so that it's mostly covered.
  10. Place the asparagus and quiche into a pre-heated 375 degree oven for 20 minutes. Check asparagus after 15 minutes and remove if tender.
  11. Once quiche has been allowed to cook for 20 minutes, remove it from the from oven.
  12. Being careful with the hot pan, place the tender roasted asparagus on top of the quiche and push down slightly to set in place. Return the pan to the hot oven and continue cooking until quiche is set in the middle and slightly browned around the edges (about 15 minutes).
  13. Once the quiche is set, remove it from the oven, sprinkle with the chopped dill, and the remaining goat cheese. Let rest 5 minutes. Cut and serve.

I moved to Idaho several years ago from sunny Southern California and have barely looked back. One of the main reasons for the move was my desire to experience the four seasons in all their glory. Idaho has not disappointed me in the least. There is always something to enjoy and look forward to, no matter what time of the year it is.

Currently, spring has sprung and I’m enjoying the tulips peaking up along the borders of my backyard. At the same time, I must admit I’m already dreaming of the strawberries, raspberries and blackberries that are sure to follow, come summer.

So, in celebration of the fruitful season of summer I have put together this fresh berry tart. I hope you enjoy it as much as the hubs and I do. It’s a special summertime treat.

The Preparation

To begin with, preheat your oven to 350 degrees and gather up the ingredients you’ll need for the Keto Lemon Berry Tart. While you are rounding up your ingredients, don’t forget the swerve as I did in the picture below. A purely rookie mistake that I’d like to say won’t happen again, but seriously, who am I kidding.

Next, line an 8-inch pie pan with parchment paper and then set the pan aside. The parchment paper is important because it helps to keep your tart from sticking. It also makes it much easier to remove the tart when plating.

The Process

The Keto Lemon Berry Tart Crust

Place the raw almonds in a food processor and pulse until almonds are coarsely ground. When you are grinding, be careful not to over process the almonds. Otherwise, you’ll be making almond butter and that’s a whole different recipe for another day.

Next, add the melted butter, cinnamon and swerve to the coarsely ground almonds. Give the ingredients a few pulses with the food processor.  After you have blended the ingredients, the almonds should be moist and clump together. If not, add another tbsp of melted butter and pulse again to combine.

Grab your parchment lined pan and scoop the mixture into the middle of the pan. Then, using your fingers, pat the mixture to form an even crust on the bottom of the pan. Once your crust is formed, slip it into the oven already preheated to 350 degrees. Bake for 10 minutes. When done, the crust will be bubbly and a bit soft. Remove the crust from the oven and put it in the refrigerator to cool while making your lemon filling for the Keto Lemon Berry Tart.

The Keto Lemon Berry Tart Filling

You can make the lemon filling for the tart while our crust is baking. If you haven’t cubed your cream cheese, do so now. When cutting up the cream cheese, I find that one inch squares are perfect. The cream cheese then fits easily into the food processor and blends up quickly.

Put the cubed cream cheese in the processor along with your heavy cream, lemon juice and swerve. Then blend until smooth and creamy.

Place the lemon filling into the refrigerator while waiting for the tart crust to cool.

The Finish

Once the tart crust is cool to the touch, it is time to put the Keto Lemon Berry Tart together. Remove the filling from the refrigerator and spread the filling over the top of the crust.

After the filling is spread, place the berries decoratively on top of the Keto Lemon Berry Tart filling. I change up the berries to whatever I am in the mood for at the moment. In the picture I used strawberries sliced in halves, blueberries and raspberries. Once blackberries come in season, you can bet I’ll be placing a few of those on top as well.

Feel free to slice the Keto Lemon Berry Tart right out of the pan or you can plate it on a pretty dish for a grand entrance. When you remove the tart, use a spatula to carefully slide it onto the plate bringing the parchment paper along. This technique helps to prevent breakage and keeps the tart in one piece.

  5. Remove the crust from the oven and place it in the refrigerator to cool.
Keto Lemon Berry Tart Filling
  1. Place the cubed cream cheese, heavy cream, lemon juice and swerve into the food processor and blend until smooth and creamy.
  2. Place the lemon filling into the refrigerator while the tart crust is cooling.
The Finish
  1. Once the tart crust is cool to the touch, spread the lemon filling on top.
  2. Remove the tart from the pan carefully using the parchment paper and a flat spatula.
  3. Place the berries on top as desired.
  4. Serve and enjoy!
Recipe Notes

When making your Keto Lemon Berry Tart feel free to use any sugar free sweetener that works for you. I have listed the nutrition information for 4 servings but the tart could easily serve 6.

How to Make Homemade Infused Chili Oil

Make your own homemade infused chili oil for a simple way to create great flavor in the recipes you prepare. For example, use infused rosemary oil to add flavor to keto pizza sauce. You can also add infused hot chili oil to roasted vegetables for a little extra zip. Infused Garlic oil is perfect for flavoring  meat, poultry, or a homemade salad dressing. The list of ways to use these wonderful bursts of flavor is endless.

Make you own infused oil and save money

Unfortunately, it’s hard to find infused oils in the store and when you do they are usually pricey.  The great news is they are simple to make. I’ve put together a couple recipes that I use that come together quickly. I love how they create an additional layer of flavor in my recipes with only a minimal amount of effort.

Instructions
  1. Wipe down your dried chili peppers to remove any dust or debris and air dry,
  2. Once dry, place the chili peppers into a clean sterilized jar.
  3. Add olive oil.
  4. Place the uncapped bottle in a slow cooker. Add water to the slow cooker until it covers about half the bottle.
  5. Leave the lid off the slow cooker. Set to low heat and allow the oil to cook for 48 hours. (Watch the water level and add warm water as necessary)
  6. Remove the oil, place the cap on and refrigerate until ready to use.
Recipe Notes

The oil may cloud up a bit in the refrigerator, but the oil is still okay. Once the bottle is removed from the cold and allowed to warm up a bit, the cloudiness will go away.

For best results use the oil within 1 - 2 months.

Easy Keto Greek Chicken: Perfect For Entertaining

I have served this dish many times when entertaining and it has always received rave reviews. One of the reasons I enjoy serving it, besides the obvious of how great it tastes, is because it is so simple to make. This gives me more time to spend with my guests. In addition, it also pairs well with a nice robust clean red wine and I’m a pushover for a good red.

I know, we have all bought the party line that chicken breasts are healthy and thighs are the devil. Therefore, with jubilation I accepted the fact “it just ain’t so”.

Chicken thighs taste so good with their juicy flavor while chicken breasts tend to be dry and flavorless. It didn’t take me long to jump on the chicken thigh bandwagon. About 5 seconds to be exact.

Instructions
The preparation
  1. Rinse and pat dry chicken and sprinkle liberally with salt and pepper. Set aside while you prepare your vegetables.
  2. Thinly slice the onions, dice the tomatoes, and slice in half the kalamata olives and gather your spices.
The Process
  1. Heat large skillet over medium heat.
  2. Add olive oil to the skillet.
  3. Once oil is sizzling, carefully add chicken thighs to skillet skin side down. Cover the pan to prevent splatter and cook for 4 to 5 minutes, or until chicken is evenly browned. Turn chicken and brown other side. Once the chicken is browned, remove it from the pan and set aside while you are making the sauce.
  4. Add the thinly slice onions to the pan and cook over medium heat until the onions are slightly browned and fragrant. About 4 minutes.
  5. Add the minced garlic and stir for one minute.
  6. Add plum tomatoes, saved juice, chicken broth and seasonings. Turn up heat until mixture is simmering.
  7. Add chicken to sauce, spooning sauce over the top and cover. Simmer chicken for 15 minutes or until chicken is cooked through and tender.
  8. Remove chicken from heat and stir in olives and arugula.
  9. Add salt and pepper to taste, if desired. Serve chicken hot with sauce spooned over it.
Recipe Notes

If you like a thicker sauce, you can remove the chicken after it is cooked and add 1/4 tsp of xanthum gum to the sauce to thicken. Then stir in kalamata olives and arugula. Serve chicken with sauce spooned over it.

Nothing beats Keto Southwestern Chili on a cold winter night

During the winter months I love curling up with a good book in front of the fireplace. There’s something extra special about being warm and cozy inside while the snow flies outside. I could sit and watch the snow fall all day. Unfortunately, I rarely have that luxury. Life is hectic and busy.

That’s why I enjoy Keto Southwestern Chili. It helps when everything is hectic. I can throw it together in minutes in my instant pot and it’s ready to eat speedy quick. It allows me more time to savor the time I do have and warms me from the inside out on those cold winter nights.

  • 1/2 onion chopped

Instructions
The Preparation
  1. Gather your ingredients.
  1. Plug in your instant pot and press the saute button to begin heating your pan.
The Process
  1. Once the instant pot is hot, Pour in the 2 tbsp olive oil and add the chopped onion.
  2. Cook the onions until softened and translucent. About 3 minutes.
  3. Add the celery, and continue to saute until the celery is softened.
  4. Add the ground beef to the onion mixture and cook until the ground beef is browned.
  5. Shut off the instant pot and add the rest of your ingredients to the pan. Stirring to incorporate all the ingredients.
  6. Place the lid on your instant pot and hit the manual button.
  7. Adjust the time for 20 minutes, close the valve to prevent the steam from escaping.
  8. After the instant pot completes its cooking cycle release the valve on the instant pot and allow the steam to escape. Then remove the lid.
  9. Stir the chili and serve topped with sour cream, cheese and sliced avocado if desired.
Recipe Notes

Any sugar free salsa will work with this recipe. I prefer a medium spicy salsa to give my chili a little extra zip. Try different types of salsa to change up the flavor profile.

The nutrition label does not include the extra condiments such as cheese, sour cream or avocado. I add the avocado to increase my fat content. Be sure to include the extra condiment calculations in your macros if you are keeping track.

Living the keto lifestyle is not exactly cheap, so saving a little money whenever I can is a bonus. Furthermore, when I make my own sausage I control what goes into it and I can adjust the seasonings to suit my taste.

The homemade breakfast sausage is great for keto meal prep. Make up a double batch and pre-cook your sausage. I form patties, links and some bulk sausage that I cook ahead of time. The pre-cooked sausage freezes well or refrigerate it for up to a week. The added fat keeps it moist and tender and it tastes great warmed up in the microwave.

I have to admit I’m quite shameless when it comes to my keto buttery maple syrup. I put it on everything. For example, in the morning I put it in my bullet coffee, on my Instant Noatmeal and on my Mac Griddle breakfast sandwich. The buttery maple flavor goes so well with everything and it’s keto!

The Preparation
  1. Gather your ingredients and a medium sized skillet to cook your syrup in.
The Procedure
  1. Place 4 tbsp butter in skillet and heat on low until butter is melted.
  2. Add 1/4 tsp vanilla bean powder (or 1 tsp) vanilla extract and 1 tsp maple extract to butter and cook for two minutes until butter is slightly browned.
  3. Add 3/4 cup water. Stir until butter and water are incorporated.
  4. Add 1/4 cup swerve confectioners sugar. Whisk until mixture is smooth and the lumps are gone.
  5. Sprinkle 1/4 tsp Xanthum gum over mixture and stir until maple syrup is thickened. If the syrup is too thick add a little water until proper consistency.
Recipe Notes

If you want your maple syrup to be a little darker, experiment with adding 1 tsp or 2 of powdered espresso.  The flavor only changes slightly, but adds a darker richer color to your maple syrup.

The syrup will last refrigerated up to 4 weeks.

Keto Mac Griddle – A Stroke of Genius

So how did I come upon this stroke of genius I call the Keto Mac Griddle?

It all started with my Keto Breakfast Biscuits.

So, I did a little more experimenting with the maple syrup and voila; perfection.

Putting the Keto Mac Griddle Together

It wasn’t a big stretch to add my homemade breakfast sausage to the breakfast biscuits and as a result, a star was born.

Of course, some people will go ahead and ruin a perfectly good Keto Mac Griddle Sandwich by adding an egg.

But to each his own, I always say. If you want to add an egg or even a piece of cheese, who am I to judge.

Meal Prep

The Keto buttery maple syrup can be made well in advance. I fact, I make up a batch quite regularly. It’s great in my morning coffee or on my keto instant noatmeal.

Similarly, make the Keto Breakfast sausage and pre-cook the patties. Then, freeze for later use. When your ready to make your breakfast sandwiches, simply take the sausage out of the freezer and place in the refrigerator the night before. The Keto breakfast biscuits can also be made ahead of time and frozen. Hopefully, your will power is better than mine, the biscuits are so good they rarely make it to my freezer.

Keto Instant Noatmeal: Sweet or Savory?

I recently tried out my keto instant noatmeal recipe on my sister-in-law (a willing guinea pig) who was visiting for the weekend.  After I served up her noatmeal, I realized I forgot the sweetener.

Unfazed, she asked if she could put butter and salt and pepper on top of her keto instant noatmeal instead. I hadn’t really thought of that combination before. So, I tried it. And wow, it was every bit as good as mine that was topped with butter and my Keto Buttery Maple Syrup.

The Perfect Keto Pizza Crust

I discovered the keto pizza dough recipe when I made Keto Pumpkin Cheesecake Breakfast Pockets from the keto diet app. The dough was delicious. I knew I wanted to try it for my pizza dough. My small change was to add psyllium fiber to the dough. The added fiber gives the dough a wheaty flavor. I think it’s perfect, but you give it a try and tell me what you think.

Keto Pizza Dough for Keto Meal Prep

The Keto pizza dough is perfect for meal prep as the pre-baked pizza crust can be frozen for later use. After you have baked the pizza crust, let it cool completely. Then, simply wrap and freeze. When you’re ready to use the crust, remove it from the freezer, add sauce and toppings to the frozen crust and bake in a pre-heated 350° oven for 15 minutes or until the toppings are hot and bubbling.

The Preparation
  1. Preheat the oven to 350 degrees. Gather your ingredients.
The Process
  1. Place shredded mozzarella cheese in a microwave safe bowl and place in the microwave for 60 seconds. Remove cheese and stir. If not completely melted, return to microwave for another few seconds.

  1. Slide the pizza dough along with the parchment paper onto a baking sheet. Prick the dough with a fork to help keep the crust from bubbling. Bake in a preheated oven for 10 minutes or until golden brown.
  2. The pizza crust can now be used immediately with your favorite toppings, or allow the crust to cool completely and freeze for later use.

Keto Personal Pan Pizza: The ultimate comfort food

One of the nice things I’ve discovered since starting the ketogenic diet is that my craving for food has greatly diminished. I am able to watch food commercials on TV quite passively now. Not a twinge of the old familiar cravings in site.

Gather your pizza toppings while crust is baking.

  7. Prick the crust with a fork a few times to keep the crust from bubbling. Bake the pizza crust in the preheated oven for 10 minutes or util lightly browned.
The Finish
  1. Remove crust from the oven. Allow pan to cool for a few minutes while gathering your toppings.
  2. Spoon the pizza sauce onto the pizza crust and spread the sauce to the edges of the crust.
  3. Place the pre-cooked sausage on top of the pizza sauce.
  4. Arrange the fresh mozzarella cheese slices on top of the sausage.
  5. Sprinkle the Keto personal pan pizza with fresh chopped oregano and parmesan.
  6. Return the pizza to the 350 degree oven and bake for an additional 15 minutes or until the toppings are bubbling.
  7. Remove from the oven. Serve hot.

Preheat the oven to 350° and gather your ingredients.

Place the almond flour, psyllium fiber, spices, baking powder and baking soda in a food processor and pulse to to mix.

Add the frozen cubed butter to the food processor and pulse.

The ingredients should resemble fine corn meal with bits of pea sized butter. Spoon the dry ingredients into a medium sized bowl.

Stir in the heavy cream and lemon juice until just combined.

In another bowl, beat the egg whites until stiff.

Gently fold the egg whites into the batter until just combined.

Spoon the batter into a silicone cupcake pan. Dividing the dough into 6 equal parts. Place the pan into the 350° preheated oven and bake for 20 minutes or until lightly browned. Cool completely before removing from pan to prevent breakage.

  3. In another bowl, beat the egg whites until stiff.
  4. Combine the heavy cream and lemon juice then stir mixture into the dry ingredients until just combined.
  5. Gently fold the egg whites into the batter. Don't over mix for a nice fluffy batter.
The Finish
  1. Spoon the batter into a silicone cupcake pan. Dividing the dough into 6 equal parts.
  2. Place the pan into the 350° preheated oven and bake for 20 minutes or until lightly browned.
  3. Cool the biscuits completely before removing from pan to prevent breakage.
Recipe Notes

Tip: The biscuits dough should be placed in a cupcake or biscuit pan for baking. Otherwise the dough will spread and be more like a pancake. It will still taste delicious but may not be the perfect biscuit you imagined.
