Keto Instant Noatmeal For A Quick and Delicious on the go Breakfast

There is nothing better than keto noatmeal in the morning, unless it”s instant noatmeal. 

In less than 5 minutes you can put together 6 servings of instant keto noatmeal, individually packaged and ready to go. Just add water and pop it in the microwave for 60 seconds when you’re ready for a hot breakfast.

Best of all, it’s deliciously satisfying.

Keto Instant Noatmeal: Sweet or Savory?

I recently tried out my keto instant noatmeal recipe on my sister-in-law (a willing guinea pig) who was visiting for the weekend.  After I served up her noatmeal, I realized I forgot the sweetener.

Unfazed, she asked if she could put butter and salt and pepper on top of her keto instant noatmeal instead. I hadn’t really thought of that combination before. So, I tried it. And wow, it was every bit as good as mine that was topped with butter and my Keto Buttery Maple Syrup.

The Prep
  1. Gather your ingredients and 6 small ziploc bags.
The Process
  1. Add All dry ingredients to a medium sized bowl and stir well.
  2. Place 1/3 cup of keto instant noatmeal mix each ziplock baggie and seal.
The finsih
  1. When ready to eat, place contents of 1 ziplock bag (1/3 cup Keto instant noatmeal ) into a microwave safe bowl. Add 1/3 cup water, stir.
  2. Place bowl in microwave for 60 seconds.
  3. Top Noatmeal with your favorite toppings and serve.

The Perfect Keto Pizza Crust

I discovered the keto pizza dough recipe when I made Keto Pumpkin Cheesecake Breakfast Pockets from the keto diet app. The dough was delicious. I knew I wanted to try it for my pizza dough. My small change was to add psyllium fiber to the dough. The added fiber gives the dough a wheaty flavor. I think it’s perfect, but you give it a try and tell me what you think.

Keto Pizza Dough for Keto Meal Prep

The Keto pizza dough is perfect for meal prep as the pre-baked pizza crust can be frozen for later use. After you have baked the pizza crust, let it cool completely. Then, simply wrap and freeze. When you’re ready to use the crust, remove it from the freezer, add sauce and toppings to the frozen crust and bake in a pre-heated 350° oven for 15 minutes or until the toppings are hot and bubbling.

The Preparation
  1. Preheat the oven to 350 degrees. Gather your ingredients.
The Process
  1. Place shredded mozzarella cheese in a microwave safe bowl and place in the microwave for 60 seconds. Remove cheese and stir. If not completely melted, return to microwave for another few seconds.
  2. Pour the almond flour and psyllium fiber on top of the melted cheese and stir until completely mixed. Scoop up the dough with your hands and pat into a round ball.
  3. It is best to keep the dough warm to make for easier rolling. If the dough loses its pliability, simply put it back in the microwave for a few seconds.
  4. Place the dough on a piece of parchment paper and roll out to your desired shape depending on what type of pizza you will be making. If you want a thick crust pizza, be careful not to roll the crust to thin.
The Finish
  1. Slide the pizza dough along with the parchment paper onto a baking sheet. Prick the dough with a fork to help keep the crust from bubbling. Bake in a preheated oven for 10 minutes or until golden brown.
  2. The pizza crust can now be used immediately with your favorite toppings, or allow the crust to cool completely and freeze for later use.

Keto Personal Pan Pizza: The ultimate comfort food

One of the nice things I’ve discovered since starting the ketogenic diet is that my craving for food has greatly diminished. I am able to watch food commercials on TV quite passively now. Not a twinge of the old familiar cravings in site.

With that being said, I still enjoy the familiar taste of foods that I grew up with. The good news is, I don’t need to sacrifice those delicious tastes just because I’m doing keto. I can still sit down and enjoy a keto personal pan pizza whenever I want to.

Personal Pan Pizza Keto Style

 

Gather your pizza toppings while crust is baking.

Spoon pizza sauce onto pizza crust and spread to the edges of your pizza.

  6. Once the dough is rolled out, Slide the pizza dough into your pizza pan. or onto a baking sheet. If using a pan, with your fingers push the dough until it covers the whole surface area and up the sides of the pan to hold your toppings.
  7. Prick the crust with a fork a few times to keep the crust from bubbling. Bake the pizza crust in the preheated oven for 10 minutes or util lightly browned.
The Finish
  1. Remove crust from the oven. Allow pan to cool for a few minutes while gathering your toppings.
  2. Spoon the pizza sauce onto the pizza crust and spread the sauce to the edges of the crust.
  3. Place the pre-cooked sausage on top of the pizza sauce.
  4. Arrange the fresh mozzarella cheese slices on top of the sausage.
  5. Sprinkle the Keto personal pan pizza with fresh chopped oregano and parmesan.
  6. Return the pizza to the 350 degree oven and bake for an additional 15 minutes or until the toppings are bubbling.
  7. Remove from the oven. Serve hot.

I accepted the reality of a sausage Mcgriddles-less life, but it didn’t come easy.  I loved the taste of those savory breakfast sandwiches even if they weren’t very healthy. So, I set out to make a keto version of my own.

Preheat the oven to 350° and gather your ingredients.

Place the almond flour, psyllium fiber, spices, baking powder and baking soda in a food processor and pulse to to mix.

Add the frozen cubed butter to the food processor and pulse.

The ingredients should resemble fine corn meal with bits of pea sized butter. Spoon the dry ingredients into a medium sized bowl.

Stir in the heavy cream and lemon juice until just combined.

In another bowl, beat the egg whites until stiff.

Gently fold the egg whites into the batter until just combined.

Spoon the batter into a silicone cupcake pan. Dividing the dough into 6 equal parts. Place the pan into the 350° preheated oven and bake for 20 minutes or until lightly browned. Cool completely before removing from pan to prevent breakage.

  2. Add the frozen cubed butter to the food processor and pulse. The ingredients should resemble fine corn meal with bits of pea sized butter. Spoon the dry ingredients into a medium sized bowl. Place i the refrigerator to keep chilled while beating the egg whites.
  3. In another bowl, beat the egg whites until stiff.
  4. Combine the heavy cream and lemon juice then stir mixture into the dry ingredients until just combined.
  5. Gently fold the egg whites into the batter. Don't over mix for a nice fluffy batter.
The Finish
  1. Spoon the batter into a silicone cupcake pan. Dividing the dough into 6 equal parts.
  2. Place the pan into the 350° preheated oven and bake for 20 minutes or until lightly browned.
  3. Cool the biscuits completely before removing from pan to prevent breakage.
Recipe Notes

Tip: The biscuits dough should be placed in a cupcake or biscuit pan for baking. Otherwise the dough will spread and be more like a pancake. It will still taste delicious but may not be the perfect biscuit you imagined.
