Keto Blueberry Balsamic Chicken

May 14, 2019 · 3 Comments

Image of keto blueberry balsamic chicken

I must confess, when it comes to this Keto blueberry balsamic chicken dish all convention goes out the window. I can’t help it. It’s that good. The combination of sweet blueberries, maple syrup and balsamic is so full of flavor, it’s frightening.

So consequently, I lick my plate.

There, I said it. Yes, I’m ashamed of my lack of self control, but when it comes to this dish I can’t help it.  Don’t blame me, if you find yourself in the same predicament. I’ve done my best to warn you.

Add a little pizzazz to your diet with Keto Blueberry Balsamic Chicken

One of the things  I’ve wondered about since starting keto is why the meals we eat can’t have a little more pizazz.

I get tired of eating the same old things. Cheese, almond flour, and proteins all have their place in the keto order of things, but it does get boring.

Image of blueberries in a white bowlThis is why I enjoy a little something out of the ordinary once in awhile like keto blueberry balsamic chicken. The carb content may be a little higher with the blueberries and balsamic, but it’s worth it. To offset the little bit of higher carb content for this dish, I watch the other carbs i’m eating for the day. It’s as simple as that.

Easy Keto Greek Chicken: Perfect For Entertaining

I have served this dish many times when entertaining and it has always received rave reviews. One of the reasons I enjoy serving it, besides the obvious of how great it tastes, is because it is so simple to make. This gives me more time to spend with my guests. In addition, it also pairs well with a nice robust clean red wine and I’m a pushover for a good red.

An amazing easy Keto Greek Chicken dish wouldn’t be as great without the chicken thighs.

Image of Easy Keto Greek Chicken in a skillet. Text Reads Easy Keto Greek Chicken. Text reads Easy Keto Greek ChickenI have to admit when I started keto and learned that chicken thighs were back on the table I did a little happy dance. I know, we have all bought the party line that chicken breasts are healthy and thighs are the devil. Therefore, with jubilation I accepted the fact “it just ain’t so”.

Chicken thighs taste so good with their juicy flavor while chicken breasts tend to be dry and flavorless. It didn’t take me long to jump on the chicken thigh bandwagon. About 5 seconds to be exact.

Instructions
The preparation
  1. Rinse and pat dry chicken and sprinkle liberally with salt and pepper. Set aside while you prepare your vegetables.
  2. Thinly slice the onions, dice the tomatoes, and slice in half the kalamata olives and gather your spices.
The Process
  1. Heat large skillet over medium heat.
  2. Add olive oil to the skillet.
  3. Once oil is sizzling, carefully add chicken thighs to skillet skin side down. Cover the pan to prevent splatter and cook for 4 to 5 minutes, or until chicken is evenly browned. Turn chicken and brown other side. Once the chicken is browned, remove it from the pan and set aside while you are making the sauce.
  4. Add the thinly slice onions to the pan and cook over medium heat until the onions are slightly browned and fragrant. About 4 minutes.

  8. Remove chicken from heat and stir in olives and arugula.
  9. Add salt and pepper to taste, if desired. Serve chicken hot with sauce spooned over it.
Recipe Notes

If you like a thicker sauce, you can remove the chicken after it is cooked and add 1/4 tsp of xanthum gum to the sauce to thicken. Then stir in kalamata olives and arugula. Serve chicken with sauce spooned over it.

Nothing beats Keto Southwestern Chili on a cold winter night

During the winter months I love curling up with a good book in front of the fireplace. There’s something extra special about being warm and cozy inside while the snow flies outside. I could sit and watch the snow fall all day. Unfortunately, I rarely have that luxury. Life is hectic and busy.

That’s why I enjoy Keto Southwestern Chili. It helps when everything is hectic. I can throw it together in minutes in my instant pot and it’s ready to eat speedy quick. It allows me more time to savor the time I do have and warms me from the inside out on those cold winter nights.

What makes a fabulous Keto Pizza Sauce?

image of a dish with keto pizza sauce . a spoon with sauce on it lies next to the dish. Test reads Easy Keto Pizza Sauce. text reads ready in 5 min, Easy Thick and Zesty Keto Pizza sauceTo begin with, the best keto pizza sauce should be thick.

Why? Because a thick sauce is perfect for spreading and stays where it’s put on your Keto pizza crust. Besides, a thick pizza sauce is the perfect vehicle for all those delicious toppings and it gives your cheese a great place to melt on.

Next, the keto pizza sauce has to have a little extra kick. I’m not talking about a burn your mouth and where’s the water kinda kick. This kick is subtle, but has just enough zing to let the savory flavor of your pizza sauce linger awhile.

Seriously, Your taste buds deserve something to think about and a fabulous keto pizza sauce will send them soaring.

Make your taste buds sing

image of a dish with keto pizza sauce . a spoon with sauce on it lies next to the dish. Test reads Easy Keto Pizza Sauce. text reads Easy Thick and Zesty Keto Pizza sauceSo, how do we get those taste buds to sing?

By using simple ingredients with the perfect mix of herbs and spices and just the right amount of fat to keep it keto.

The best part is, the sauce doesn’t have to be cooked all day. In fact, 5 minutes will do it and know one will ever know you didn’t cook the pizza sauce all day long,

Let’s sum it all up

It takes only 5 minutes to create a great pizza sauce that will turn any ho hum pizza into a masterpiece and make your taste buds sing,

I like the sound of that!

Fortunately, I found an alternative.

The Perfect Keto Pizza Crust

I discovered the keto pizza dough recipe when I made Keto Pumpkin Cheesecake Breakfast Pockets from the keto diet app. The dough was delicious. I knew I wanted to try it for my pizza dough. My small change was to add psyllium fiber to the dough. The added fiber gives the dough a wheaty flavor. I think it’s perfect, but you give it a try and tell me what you think.

Keto Pizza Dough for Keto Meal Prep

The Keto pizza dough is perfect for meal prep as the pre-baked pizza crust can be frozen for later use. After you have baked the pizza crust, let it cool completely. Then, simply wrap and freeze. When you’re ready to use the crust, remove it from the freezer, add sauce and toppings to the frozen crust and bake in a pre-heated 350° oven for 15 minutes or until the toppings are hot and bubbling.

Instructions
The Preparation
  1. Preheat the oven to 350 degrees. Gather your ingredients.
The Process
  1. Place shredded mozzarella cheese in a microwave safe bowl and place in the microwave for 60 seconds. Remove cheese and stir. If not completely melted, return to microwave for another few seconds.
  2. Pour the almond flour and psyllium fiber on top of the melted cheese and stir until completely mixed. Scoop up the dough with your hands and pat into a round ball.
  3. It is best to keep the dough warm to make for easier rolling. If the dough loses its pliability, simply put it back in the microwave for a few seconds.
  4. Place the dough on a piece of parchment paper and roll out to your desired shape depending on what type of pizza you will be making. If you want a thick crust pizza, be careful not to roll the crust to thin.
The Finish
  1. Slide the pizza dough along with the parchment paper onto a baking sheet. Prick the dough with a fork to help keep the crust from bubbling. Bake in a preheated oven for 10 minutes or until golden brown.
  2. The pizza crust can now be used immediately with your favorite toppings, or allow the crust to cool completely and freeze for later use.

Keto Personal Pan Pizza: The ultimate comfort food

One of the nice things I’ve discovered since starting the ketogenic diet is that my craving for food has greatly diminished. I am able to watch food commercials on TV quite passively now. Not a twinge of the old familiar cravings in site.

With that being said, I still enjoy the familiar taste of foods that I grew up with. The good news is, I don’t need to sacrifice those delicious tastes just because I’m doing keto. I can still sit down and enjoy a keto personal pan pizza whenever I want to.

Life is good, indeed.

Personal pan pizza your way: Keto style

The tasty keto personal pan pizza can be whipped up in a flash and personalized any way you’d like. As an added bonus, it tastes amazing. Mix and match with your favorite low carb toppings to make it personal.

Be sure to watch the sugar content on the meats you find in the grocery store. They can be chock full of ingredients you don’t want to eat. My homemade low carb sausage might be a lower cost option when you are looking for the perfect topping. Or head over to US Wellness Meats for great sugar free options that I enjoy.

I love these colorful ceramic coated fry pans from GreenLife. They’re perfect for making Keto Personal Pan Pizza’s.  Furthermore, they are safe to use with ceramic non-stick coating manufactured without PFAS and PFOA, lead or cadmium. These beauties are also oven safe up to 350° F.

Best of all, they are reasonably priced at $14.99 for both!. Get yours at Amazon.

Units:

Instructions
Pizza Crust
  1. Preheat the oven to 350 degrees. Gather your ingredients.
  2. Place shredded mozzarella cheese in a microwave safe bowl and place in the microwave for 60 seconds. Remove cheese and stir. If not completely melted, return to microwave for another few seconds.
  3. Pour the almond flour and psyllium fiber on top of the melted cheese and stir until completely mixed. Scoop up the dough with your hands and pat into a round ball.
  4. Place the dough ball on a cutting board or piece of parchment paper. It's best to keep the dough warm to make for easier rolling. If the dough loses its pliability, simply put it back in the microwave for a few seconds.
  5. Roll the dough out to your desired shape depending on what type of pan you'll be using. If you want a thicker crust, be careful not to roll the crust to thin.
  6. Once the dough is rolled out, Slide the pizza dough into your pizza pan. or onto a baking sheet. If using a pan, with your fingers push the dough until it covers the whole surface area and up the sides of the pan to hold your toppings.
  7. Prick the crust with a fork a few times to keep the crust from bubbling. Bake the pizza crust in the preheated oven for 10 minutes or util lightly browned.
The Finish
  1. Remove crust from the oven. Allow pan to cool for a few minutes while gathering your toppings.
  2. Spoon the pizza sauce onto the pizza crust and spread the sauce to the edges of the crust.
  3. Place the pre-cooked sausage on top of the pizza sauce.
  4. Arrange the fresh mozzarella cheese slices on top of the sausage.
  5. Sprinkle the Keto personal pan pizza with fresh chopped oregano and parmesan.
  6. Return the pizza to the 350 degree oven and bake for an additional 15 minutes or until the toppings are bubbling.
  7. Remove from the oven. Serve hot.
